Boutique Chocolatiers: Part II
Wichita may not be a place in which
you’d expect to find
a boutique chocolatier, but that just proves that fine confectioners
are Cocoa Dolce Coconut Creampopping up everywhere. Beth Tully’s
chocolates are a delight. They may look simple, in that they’re
not heavily decorated, but I’d go big distances to have another
of her Coconut Cream pieces dark-roasted almonds,
moist shreds of coconut and a just-right bittersweet chocolate shell
holding it all together. If you remember the coconut candy bars of
your youth with fondness, don’t miss this. There’s a
terrific Classic Truffle, too, and an equally good Mocha. I like
the enthusiasm I find here.

Cocoa Dolce: From executive to Master Chocolatier
If you're hungry, we're giving you ample notice; prepare yourself.
We are indulging you with one of the gastronomical wonders of the
world.
Beth Tully, owner of Cocoa Dolce, is in her element -- pure chocolate. What she
makes is nothing like a grocery store Hershey bar.
"
Our focus is very much on a sensual fresh taste experience," said Tully. "Our
shelf-life is only three weeks compared to six to nine months from a Hershey's
item."
A milestone birthday a few years ago prompted Beth to follow a passion. In spite
of a master's degree in speech therapy and a decade as a highly compensated corporate
executive, she wasn't complete.

Madness - Part II
Will Beth Tully and her kitchen elves please produce something
slightly imperfect just once, as vague assurance that they’re
human? About 1-1/4 inches by 1-1/4 inches by 1 inch tall, these
are vanilla bean marshmallows covered in moderately dark chocolate,
with some white chocolate striping for decoration. This marshmallow
is a cross between sophisticated and playful, with the quality
flavors of both chocolate and marshmallow shining through. Tender
and delicate. As of this writing, the marshmallows are not yet
listed on the website, so you must call to order. A favorite.
